This is such an easy recipe, and we make it all the time now to use up overripe bananas. It’s great for breakfast or as a snack.
Ingredients
2 cups flour
2 tsp baking powder
pinch of salt
125g butter/margarine
2 eggs
1 cup sugar
3 bananas, mashed with a fork
(optional): handful of chopped nuts (walnuts, pecans or hazelnuts)
Method
Cream butter and sugar (if the butter is too hard, I soften it in the microwave first).
Add eggs, flour, baking powder, and mashed banana. Add chopped nuts, if including.
If the mixture is too stiff, you can add a little milk to soften it. You should be able to spoon it into the baking pan.
Spoon into a greased loaf-shaped pan (or other) and bake at 180 degrees Celsius for 30-45 minutes.
It is especially good fresh and warm out of the oven, sliced with butter!
